If you're building for iPad, you can't natively lock an app to one orientation in BT (you would need to dig into the code). On a BT level, you cannot restrict certain screens to orientations. You may be able to achieve this by changing some code, but I wouldn't count on it - imo it doesn't make a good user experience to be flipping between orientations all the time!
