So one way to test it would be to save your spreadsheet on a server (Dropbox, etc), and then use the standard webbrowser on your iOS device (mobile Safari) to load the spreadsheet. Then I added the HTML screen into my app with functional data entry fields, formulas, etc. I was able to create a payment calculator for a used car business doing this.
