I think the ebooks will work on ipad and iphone. You can't create in ibooks author and submit to Amazon or SmashWords, etc. Your "App" will need to have functionality beyond just being an ebook. Adding quizes might work otherwise you can only submit to ibooks. I'm not sure if you can submit an ebook into ibooks then submit an app with the ebook and other features to the app store. I'm working on something like this right now but I'm only creating the book and app for the iPad. I'm not even going to bother with the iphone because of the size.
