The issue is something that definitely needs to be documented with the self hosted server as I would never have guessed it on my own and the same is not true with the buzz touch.com server. When you create a new app you have to go to 'Global Themes' --> 'Default theme' --> 'Screen Background Color' --> enter a color and hit save.
