I think I can help you out with a couple of these... to make a splash screen you literally have to select splash screen from the create a new screen menu. Then you select your image/background and how long you want it to be up for. You can also do it directly from an image under the info pane of Xcode but this is the easiest way. Once you've created the splash screen screen then you go under themes and there's an option for it. To make a menu no one can open, don't link it to anything and just have the menu, I hope I got that right.

I've found it better to replace the Default.png and [email protected] files with an image (in .png format) that you want for a splash screen. Apple UI guidelines suggest those images should not be used as a splash screen, but I have found more apps than not - and high quality apps at that - tend to do things that way. Otherwise, if you use the default images, AND create a splash screen, you get a few seconds of black, then your splash screen. That wasn't visually appealing to me.
