I wuold like my student to be able to print out and/or open PDFs or Word docs in my app in other apps such as Paperdesk or notify. Is there a way to do this in a v1.5 app?

This has been brought up in the past. There is currently no way to print from Buzztouch so you have two options that I know of, but I am by no means an expert on this. Option #1: Instead of using a Word or PDF screen, try opening the file with safari instead. Yes, this will put your app in the background but then from safari they will have the option to open in iBooks from where they can save, print, etc. Option #2: You can use what's called URL schemes. A url scheme is sort of a shortcut associated with an app that will tell your phone to open that specific app when the link is clicked. Some of the more common ones are twitter and facebook.
